Our Honey

HONEY VARIETIES

Our beehives are typically located across a range of semi-rural and bush locations in the Southern and Central Tablelands of NSW. Yellowbox, Stringy Bark and Red Gum are common varieties of eucalypts in our area. These trees can be used to produce some of the best tasting honey in the world and it is their flavours that shine through in our product.

Honey is seasonal and its characteristics will be different depending on the weather and the flowering cycles of plants. We like embrace this variety rather than blend honey types to maintain consistency.

OUR PROCESS

Our extraction process revolves around the use of a mobile extraction trailer which can be moved to the beehives removing the need to transport honey supers back to a facility for extraction. 

Our honey is cold extracted, meaning that we do not heat or pasteurize the honey during the extraction process. Heat damages the flavour of the honey. Keeping things cool helps to ensure that the honey maintains its flavour.

Our honey is gravity filtered and strained through a series of mesh screens which removes the bulk of the wax but still allows a small amount of pollen to pass through. Pollen has numerous health benefits. It helps to reduce inflammation, is full of antioxidants and can help to reduce the symptoms of hay fever. These are other reasons why raw honey is far superior to pasteurized.
